Beer Butt Chicken

   This is a technique for cooking a whole chicken that is gaining popularity because of the juicy and tender finished product.  You can do this in your smoker, oven, or on the grill.  People who try it once seldom go back to other methods of roasting.  So what is it?

   Take one whole chicken and clean the inside cavity out with cold water.  Open one can of beer and properly dispose of half the contents.  Add whatever spices you would like to the can of beer.  Generally you will see garlic, cayenne pepper, diced onion, cumin, or Eden Meat Market Meat Seasoning.  Next step is to place the whole chicken right over the top of the can of beer.  Carefully place the chickens upright on your cooking surface.  Cook the chicken as you would normally would.  A meat thermometer works best when testing doneness (180 degrees deep in the thigh).   

   So why does this work so well?  First, you are adding a source of moisture to the chicken that keeps it from drying out.  Second, you are adding beer which has yeast and malt that react with the chicken, particularly the skin, making it thin and crispy while the meat remains juicy.

Tips for Cooking Turkeys

* Place thawed or fresh turkey, breast up on a flat rack in a shallow pan, 2 to 2-1/2 inches deep.

* Brush or rub skin with oil to prevent the skin from drying and to enhance the golden color.

* Place in a preheated 325 degree oven

* When turkey is about two-thirds done, loosely cover the breast and top of drumsticks with a piece of foil to prevent overcooking the breast.

* Use this roasting schedule as a guideline; start checking for doneness 1/2 hour before recommended end times.

Turkey is done when meat thermometer

reaches the following temperatures:

* 170 degrees deep in the thigh; also, juices should be clear, not reddish pink when thigh muscle is pierced deeply.

* 160 degrees in the center of the stuffing, if turkey is stuffed.

Before removing stuffing and carving, let turkey stand 15 minutes to allow juices to set and stuffing temperature to rise to 165 degrees.
